   Introduction

The curry leaf tree is indigenous to the country of India and is grows almost everywhere barring the high altitudes of the Himalayas. In fact India the largest producer of the aromatic curry leaves. Curry leaf is included as an essential flavoring element in the culinary art of Indian savory dishes, especially South India. Besides great food value and flavoring property, curry leaf also boasts of medicinal values.


   Description

It is a small tree, growing 4–6 m (13-20 feet) tall, with a trunk up to 40 cm diameter. The leaves are pinnate, with 11-21 leaflets, each leaflet 2–4 cm long and 1–2 cm broad. They are highly aromatic. The flowers are small, white, and fragrant. The small black shiny berries are edible, but their seeds are poisonous. Curry leaves release a strong curry-like fragrance with a citrus, sometimes compared to a tangerine, overtone. Some describe the flavor as nutty with a hint of lemon. Curry leaves should be purchased as needed as they quickly lose flavor.


   Culinary Use Of Curry Leaf/Kadi Patta

  Curry leaves can be either eaten raw or can be sauted in butter, cheese or oil.
  The leaves of Murraya koenigii are also used as a herb in Ayurvedic medicine.
  South Indian and Sri Lankan cuisine is unthinkable without the flavoring ingredient Of Curry     leaf.
  Curry leaves in dried or fried state impart an unusual taste and flavor to the Curries, fish and     meat dishes, pickles, soups, sweet dishes and so on.


   Medicinal Uses Of Curry Leaf/Kadi Patta

  The leaves are useful in treating skin problems, digestive ailments and diabetes.
 Since yore, the curry leaf is used in different forms of medicines for its intrinsic medicinal     properties.
 The scientist and horticulture division of the University of Agricultural Sciences Dharward   recently found out in a research that the bark of the curry tree has cooling and healing     properties and can be used to cure piles, nausea, blood disorders and leucoderma.
